Poplar is one of the best materials to practise on for many reasons: it’s soft enough to make cutting and chiselling easy, yet hard and structural enough to prevent crumbling, much like softwoods such as pine are prone to. Finally, it's very cheap and abundant, so there is absolutely no shame in throwing it on the fire to hide evidence of your terrible attempts at dovetailing.
These components are provided at 100m wide (4”) and 15mm Thick (⅝”) and are perfectly square right out of the box. Meaning you can get to work practising without the faff. These will also make great practice for mitred dovetails among many other variations of joints.

These work perfectly! I had actually given up on attempting mitres with hand tools, as it was just too frustrating, but I just managed to make my first absolutely perfect mitre joint. Extremely satisfying :)
Just make sure to use a solid and strong clamp, to prevent the guide from slipping back under pressure, especially when working on hard wood. As my clamp wasn't doing the job, my solution was to place a thin anti-slip mat between workpiece and guide. This solved the problem perfectly for me.
